INGREDIENTS:
- 40 grams/0.88 lbs grated parmesan
- 3 garlic cloves
- 1 small onion
- 1 medium avocado
- 1 tablespoon/ 15 ml lime juice
- 200 ml/0.8 cup of water
- 200 ml/ 5/6 cup of cooking cream
- salt ( as for your taste )
- pepper ( as for your taste )
- 110 grams/ 1.09 cups dried pasta ( I used penne pasta )
- 1 tablespoon/ 15 ml olive oil.
For the topping add some extra parmesan, maybe some basil, and more pepper.
HOW TO PREPARE:
Into a pot start boiling the pasta according to the cooking instruction it has written on the box.
In the meantime, into a blender add your avocado (after you removed the skin), with the lime juice and a pint of salt. Set it aside for now.
In a deeper type of pan ( you need to have some space as you will cook the sauce and add the pasta at the end to mix well) add the olive oil, and chopped onion and cook it for 2-3 minutes. After that add your chopped garlic and let it fry for 2 more minutes.
Now, over the onion and garlic, you can add the rest of the ingredients: water, blended avocado sauce, parmesan, salt, and pepper. Now let it cook over medium heat for around 8 minutes. Now add the cooking cream and cook for 5-6 minutes until the sauce doesn't look runny anymore ( the time may vary depending on the cooking type of stove- I have induction so it is kinda different ).
Once the sauce is ready, drain your pasta and add it to the sauce.
Mix everything well.
Add it to a plate and use more parmesan, basil, pepper, or even more lime juice if you feel the need to.
*Notes:
If you want to make it vegan just add nutritional yeast instead of parmesan and maybe some cajun cooking cream. These two combination work very well together.
Funny facts: When I was living in Istanbul I had a fish dish that I was a lot in love with. I now dont remember the name of it. One night, as the electricity was gone and I was very much hungry, I wanted to cook something fast and easy and I had an avocado that was very soft so I needed to consume it. As I was feeling very creative with that, I just throw all these ingredients without being very sure of the result. I was very stunned by the result, and by the fact the taste was very similar to that fish dish I loved. I made this recipe for some people and everyone liked it a lot. So today I am sharing with you, I hope you will like it as well.
