INGREDIENTS: ( 2 SERVINGS )
- 4 eggs
- 1 red pepper
- 1 onion
- 2 1/5 cups /400 grams peeled diced tomatoes ( I use canned ones )
- 1/2 teaspoon /1 gram of cumin powder
- 1/2 teaspoon /1.15 grams of paprika powder
- 1 teaspoon/ 1.97 grams chilli flakes
- 1/2 teaspoon /2.84 grams of salt
- 1/2 teaspoon/ 0.789 grams garlic powder
- 1 tablespoon/15 ml oil ( I used avocado oil )
INSTRUCTIONS:
Finely chop your onion and red pepper
Into a hot pan add the oil, chopped onion, and pepper. Fry it for 4 minutes or till the onion becomes transparent.
Add your canned peeled and diced tomatoes over the onion and pepper. Add all the condiments, stir everything and cook it for 10 minutes or till the water from the tomato evaporates.
With the help of a spatula make little holes in the sauce, and crack one egg in each hole. Cover the pan with a lid and cook for 5-6 minutes until it reaches your taste.
Add some chopped parsley before serving
*Notes:
Use a nonstick pan as the mixture can easily stick. The cooking time may vary depending on the thickness and size of the pan. Keep an eye on the eggs until they reach your liking . You can add some feta cheese if you prefer, it will taste delicious.
