IMPORTANT NOTE: Lentils should be soaked one night before cooking.
You will need a food processor or a blender to create this recipe.
INGREDIENTS:
- 2 cups/400 gr dried red lentils
- 4 eggs
- 1 cup/245 gr yogurt
- 1/4 cups olive oil
- 1 tbsp/10 gr baking powder
- 1/2 tbsp/5 gr baking soda
- 3 tbsp/36 gr unsalted crumbly cheese
- 1/2 tbsp/5 gr salt
- 2 tbsp/14 gr black cumin
- 0.2 oz/6 gr chopped fresh dill
- 2 tbsp/14 gr sesame seeds
INSTRUCTIONS:
Preheat your oven at 185 Celsius/365 Fahrenheit
Add your dried lentil to a large bowl. Rinse it multiple times with water till the water becomes clear. Submerge underwater and let it soak overnight.
Drain the water from the lentils and wash them one more time. Place it in a colander to make sure all the water is removed.
Into a food processor or a blender add the next ingredients: soaked lentils, eggs, olive oil, yogurt, salt, baking powder, baking soda. Mix them all at high speed until it becomes like a liquid cream.
Add the black cumin and dill and whisk with a spatula.
Coat your deep baking tray with oil. Add the lentil cream and sprinkle the sesame seeds over the top. Put it into the oven.
Bake it for 40-50 minutes.
After its ready let it fully cool off. Do not try to cut it while its still warm.
It needs to be stored in the fridge and you can consume it within a week.
Enjoy!
*NOTES:
If you don't have unsalted cheese you can skip it or you can use one with salt but be careful to reduce the quantity of added salt.
You can add different condiments depending on your taste. For example, you can use parsley instead of dill.
The texture is gonna be crumbly and that's perfectly normal since the red lentil doesn't contain gluten.
