Tomato and red pepper paste breakfast spread ( Acuka )




INGREDIENTS:

- 2 tablespoon/28 grams of tomato paste

- 2 tablespoon/28 grams of red pepper paste (sweet)

- 1/2 cup/60 ml olive oil

- 1 cup/95 grams of walnuts

- 1 teaspoon/2.48 gram of breadcrumbs

= 4 cloves peeled garlic

- 1 teaspoon/2 gram chili flakes

- 1 teaspoon/0.92 gram of dried thyme

- 1 teaspoon/1 gram of ground cumin

- 1/2 teaspoon/1.12 grams of ground black pepper

- 1/2 tespoon/2.84 gram salt


INSTRUCTIONS:

  1. Into a frying pan add 1 teaspoon of olive oil, tomato paste, and red pepper paste, and fry for 2 minutes. Mix it continuously as it might get burned easily.

  2. Remove it from the frying pan and let it cool off.

  3. In the meantime, add your walnuts to a blender and ground them.

  4. Into a large bowl add the cooked tomato and pepper paste. With the help of a garlic press mince the garlic and add it to the bowl.

  5. Now you can add grounded walnuts and all the rest of the ingredients and mix well until a spreadable paste is formed.

  6. Taste it to verify if you want to add more salt.

Serve it cold on a slice of toasted bread.

Keep it refrigerated and consume it within a week.



*Notes:

This recipe s very versatile so you can add more spices if you would like to. If you don't have walnuts on the hand you can use peanuts or other nuts of your choice.

Use a good quality olive oil as it can make a huge difference.

It will thicken in the fridge because of the olive oil.
