Turkish carrot salad (Havuç Tarator)



INGREDIENTS:

- 1 tablespoon/10 ml olive oil

- 2 pieces of big carrots

- 1/2 teaspoon/2 grams of salt

- 1/4 teaspoon powder pepper

- 1 garlic clove ( smashed )

- 1/3 cup / 35 grams chopped walnuts

- 3/5 cup /140 full fat yogurt

- Parsley ( optional )



INSTRUCTIONS:

  1. Using a grater shred your carrots

  2. Into a frying pan add olive oil. shredded carrots and salt and cook it for 2-3 minutes. Mix it often as it can burn easily

  3. Transfer it to a bowl and let it cool down

  4. Add yogurt, powder pepper, smashed garlic, and chopped walnuts, and give it a good mix.

  5. Transfer it to a flat plate and pour good quality olive oil over the top. Optionally add some parsley for a nice presentation

  6. Leave it in the fridge for a minimum of half an hour. Serve it cold.




*Notes

This is a side dish, not a meal. It's perfect for hot days. If you don't have walnuts at hand, you can use other types of nuts, it will work.
