Tzatziki

INGREDIENTS



- 2 medium cucumbers / 230 grams

- 1 tbsp lemon juice (optional)

- 1 tbsp dried mint

- 2 garlic cloves

- 2 tbsp olive oil

- 2 tbsp chopped fresh dill

- 1 cup yogurt/220 grams

- salt




INSTRUCTIONS


  1. Using a grater shred your cucumbers. Spread salt over it and let it sit for 10 minutes. Salt will help to remove water

  2. Squeeze the shredded cucumbers between your palms to help remove the water

  3. Transfer your squeezed cucumber into a bowl

  4. Add dried mint, olive oil, fresh dill, and yogurt to the grated cucumbers bowl and stir

  5. Mince garlic and add it to the bowl, stir again and taste. You can add more salt if you want

  6. You can use fresh herbs to decorate your plate and lemon juice. The yogurt might be sour so in that case lemon juice is not needed.

Serve it cold




Notes*


You can remove the skin of cucumbers if you like it that way. It is preferable to use high-fat yogurt (a greek one ). If you don't like fresh dill you can replace it with parsley, it will taste very good. Change the herbs depending on your taste. You can also use dried herbs instead of fresh ones.
